MUG CAKES INGREDIENTS:
FOODIE
SIMPLE QUICHE
ALL YOU NEED:
Creme fraiche/Single cream 300ml
Milk 2 tsp
Medium egg 1
Salt and pepper to your preference
Sliced beef tomato 1
Chopped broccoli
Small tinned tuna 350g
Grated emmental cheese
Savoury pastry case
Serves 2-4 side meals
Serving suggestion: with salad or chips
cooking time: 40 mins
HOW TO BAKE ITPlace the tuna then tomato, broccoli evenly in the case.
Whisk creme fraiche, milk, egg together with salt and pepper then
pour over the filling in the case. Sprinkle cheese evenly on top and put
in the oven, gas mark 6 /180 fan for 30 mins.

for the poor unsuspecting challenger with no chance once
this one greets tastebuds...game over.

Love cakes...yes GUILTY GUILTY! This time I have baked the super Battenburg cake but even bigger.
LOVE LOVE baking...I discovered baking fabulous recipes about a year ago
and have baked for friends and family ever since. No I'm not a master chef
but that hasn't stopped me.
I would like to share with you my favourite cocoa and madeira marble cake,
which doesn't last 5 minutes in my house.

Now here is what I do to get it so yummy:
Get:
7" tin
200g sifted plain four
250g of butter
250g of casting sugar
50g good quality chocolate
50ml full fat milk
4 medium eggs
1 tablespoon gluten free baking powder
2 teaspoons vanilla essence
2 tablespoons sifted cocoa powder
Chocolate buttercream:
100g unsalted butter (softened)
175g icing sugar
50g melted chocolate
Melt butter and sugar in a sauce pan then pour into bowl, add vanilla and eggs then
whizz together for 3mins. Add milk and gradually, fold sifted flour and baking powder
but DON'T whizz it.
AFTER, separate mixture into two halves. Fold cocoa into one half
of the mixture. Pour a quarter of vanilla mix into the tin follow with a
quarter of the coca mix and gently use a knife to form an "s" pattern in
mix but I find it easier using a chop stick. Keep alternating the two
different cake mixes to create the marble effect.
In the oven it goes at gas mark 5/ 180c , 1 hr 30mins or until shrinks
away from the sides of the tin and knife is clean when poked in middle
of cake.
Topping:
Cream the butter and icing sugar together with a wooden spoon (it's best to
add the icing sugar gradually). Beat until light, then add the cooled melted
chocolate. Spread it on and add your decorations like chocolate buttons.
Yum!
Anybody who know me, they'll know I dislike criminal stogie heavy sponge cakes. No matter what sponge should be soft, light, moist as well as tasty. That's why I've searched for the perfect method to achieve just that and guess what....alas... I think I've finally found it.
Prep time: 15-20mins
Oven time 35mins
What you need
175g sifted self raising flour
175g castor sugar
170g unsalted butter
1 1/2 tablespoon of vanilla essence
1 teaspoon of lemon essence (optional)
3 medium eggs
7" tin
metal or rubber Spatula
electric /metal hand whisk
sift
grease proof paper
How did I do it!
Separate the eggs yolks from the whites, now whisk whites for 5mins or until doubles in size whilst adding one half of the sugar. Should be very fluffy and light. After whisk the yolks until light whilst adding the remainder of sugar. Fold the sugary egg yolks with spatula into the sugary whites. Now fold the flour into sugary eggs do not stir. Melt the butter and mix the vanilla and lemon into butter then pour into the mixture and slowly fold mixture.
Simply ready to pour into a grease proof lined tin and place in preheated oven at 180c/gas mark5.
Bake for at least 35 mins or more until the sides shrink away from sides of tin and fork, skewer or chop stick is poked in middle and free from mixture.
HUMUS
Kick start a vegetarian diet with homemade humus dip with pitta bread. Delish!

I don't just have a sweet tooth I have a savoury tooth and would like to present my home made soups; Butternut squash soup, tomato soup and Lentil soup ( with lentils, onions, garlic, chopped tomatoes, curry, turmeric, black pepper, pepper sauce, parsley, coriander. Garnish or top with vegetable or herb.)
